【摘要】:ThisEuropeanStandardspecifiesanion-exchangechromatographicmethodforthedeterminationofthenitrateandnitritecontentsofmeatproductsandhasbeenvalidatedfordifferentmeatproductswithanitratecontentof50mg/kgto300mg/kgasnitrateionandanitritecontentofapproximately40mg/kgasnitriteion.Validationdataobtainedfrominterlaboratorystudiesshowthatthismethodmayalsobeappliedtothedeterminationofnitrateinvegetablesandbabyfood.Furthermore,themethodmaybeappliedforthedeterminationofnitriteinmeatproductshavinganitritecontentgreaterthan40mg/kg.Nitrateandnitriteareextractedfromthetestsamplewithhotwater.Theaqueoussolutionistreatedwithacetonitriletoremoveanyinterferingsubstance.Thenitrateandnitritecontentsofthesolutionarethendeterminedbyion-exchangechromatography(IC)andultraviolet(UV)detectionatawavelengthof205nm.#,,#
